Almonds are a delicious and nutritious food to add to just about anything. But here are some delicious out of the box salad ideas that utilize almonds from nutritionists/ dieticians/ chefs. Now you can have your salad and eat it too!

Strawberry Spinach Salad Topped with Cinnamon Almonds

Ingredients:

  • Spinach
  • Strawberries
  • Cinnamon almonds (recipe in yesterday’s post)
  • Quinoa
  • Goat cheese
  • Poppyseed dressing

Chopped Vegetable Salad with Honey Mustard Vinaigrette

Ingredients:

4 cups mixed salad greens
1 cup arugula
1 cup micro-greens
1/2 cup basil, torn
1 cup chopped green cabbage
1 cup chopped red cabbage
1 cup grilled fresh corn
8 shishito peppers, grilled or roasted
6 radishes, sliced thinly
2 green onions, chopped
3 red chile peppers, sliced thinly
1/2 tsp. kosher salt

Balsamic Avocado Chicken Caprese Salad

Ingredients:

  • 3 chicken breasts, sliced into strips
  • 5 cups of your favorite greens (I mixed romaine and arugula) ⁣
  • 1 sliced avocado ⁣
  • 1 cup halved cherry tomatoes ⁣
  • 1/2 cup mini mozzarella balls⁣
  • 1/4 cup thinly sliced basil leaves
  • 1 cup of chopped or finely sliced almonds
  • salt and pepper to taste ⁣
